Raw Chocolate Coconut Truffles

1 cup coconut butter, melted

1 cup almond meal

½ cup melted coconut oil

½ cup cacao powder

2 – 3 tablespoons of rice malt syrup

1 teaspoon of vanilla powder

1. Mix all of the dry ingredients together in a large bowl.

2. In a seperate bowl, mix all of the wet ingredients. Pour the wet ingredients into the dry ones, combining well. The mixture will be wet, but never fear.

3. If you want to make a slice (it’s the easier, less messy option!) line a container with baking paper and push the mixture down. Move to the fridge to harden for a few hours.

4. Otherwise, to make individual truffles, let the mixture harden slightly in the fridge for 30 minutes. Then roll into balls & place in the fridge for a few hours to set.
