Protein Baked Oatmeal Recipe
Ingredients:
2 cups rolled oats
1/2 cup vanilla pea protein
1/4 cup collagen
2 tablespoons chia seeds
1 teaspoon cinnamon
2 eggs
1 cup + 1/3 cups coconut milk
1 grated apple
1 mashed banana
Optional; 1 grated carrot, 1/2 grated zucchini
To top; fresh sliced strawberries, fresh or frozen blueberries
Method:
Preheat your oven to 180 degrees FF and coat a 21x21cm baking dish with oil or line with parchment paper
Add dry ingredients to a large bowl and combine
Add wet ingredients to another bowl and mix well, including the fruit & veggies
Tip wet into dry and stir to combine. Pour into your prepared dish. Top with sliced strawberries or blueberries
Optional; leave to soak on the counter for 1 to 5 hours. This isn’t essential but I do like to do it if I have the time to increase nutrient availability and reduce the phytic acid load
Cook in the oven for 1 hour, rotating your dish half way through. Let cool completely before slicing
Recipe notes:
If the top is starting to brown early, you can place parchment paper over the top
Ensure you don’t slice these oats until they are completely cool. This is very important as they continue to cook whilst coming to room temperature
Therefore, if you cook this late at night, I suggest leaving the oats in your (off) oven and slicing the following morning
I personally cut this into 6 portions and add yoghurt and berries to make a complete meal, as per second side
You can share this with your little ones, just be mindful of the ingredients in your chosen protein powder and if you’re comfortable sharing this with them. I give Pearl (currently 18 months) bites of mine or slices to snack on but don’t give her this for a full meal
This isn’t an overly sweet oatmeal, add 3 tablespoons of honey or maple syrup if you would like it to be. You can also use 3 drops of liquid stevia or monk fruit for sugar free
Store in the fridge and eat within 4 days
Freezes & defrosts beautifully! Transfer a slice to the fridge overnight to do so. Can be reheated in the oven or a microwave
