An Easy Brocamole (Broccoli X Guacamole) Recipe
This brocamole recipe is the only dip recipe you will ever need! Well, this as my paleo hummus and I promise you are set. Dips are the perfect dish to bring to a picnic or party that are guaranteed crowd pleasers. Make these crackers to accompany and you’re sure to be everyone’s favourite attendee!
This recipe is adapted from Nigella Lawson.
Blend in a food processor until just combined:
1 lightly steamed and cooled head of broccoli (stalks included)
1/2 cup of extra virgin olive oil
2 tablespoons of lemon juice or apple cider vinegar
Now add in:
2 ripe avocados
1/2 red onion, finely diced
One bunch of coriander, chopped
2 limes, the zest and the juice (tip; zest first)
2 teaspoons fine salt
A big crack of pepper
Garnish with a generous glug of extra virgin olive oil, more salt, and nigella or sesame seeds if desired. Store in a airtight container for up to 4 days in the fridge. Leftovers go fabulously well on toast.
